Using Coconut for Mexican Recipes

Coconut has always been part of Mexican cuisine. In fact there are a lot Mexican recipes that use coconut and one of the more famous ones is Chilled Mexican Coconut Soup. Chilled Mexican coconut soup is a very unique type of soup, not only is it served cold, it is also served with coconut. This type of soup is usually served as an appetizer or before a very spicy entrée. It is very easy to cook you basically just put everything into one big bowl and then let it simmer for fifteen minutes and then let it chill in the refrigerator for an hour or so before serving it.

The ingredients you would need are the following.

1/2 teaspoon salt

5 cups milk

1 teaspoon white sugar

1 cup heavy cream

2 2/3 cups unsweetened dry shredded coconut

1 2/3 cups chicken stock

1 2/3 cups coconut milk

1/2 teaspoon ground white pepper

Handful fresh cilantro

This soup is great if paired with Mexican cookies.
